Omena Delicacy

What is Omena? Omena is small fish most common among the Luo community in Kenya.. Good source of protein. Found in Lake Victoria. Omena should be properly cleaned or it will have a bitter taste will have sand when you eat it! Omena carries a lot of sad so it should be washed properly. To clean it up put in a pot/sufuria with lots of water and bring to boil for about 15 minutes. Let  the water settle and let the dirt settle at the bottom and the scoop the Omena out. Repeat again. After cleaning it up, deep fry until brown to prevent it from breaking before cooking it with sauce…some people skip the deep frying part! When taking it out of deep fry place a paper towel to drain the oil. Ingredients: 500gms dry omena 2 Ripe Tomatoes 1 bunch dhania 1 Onion (medium) 1 Garlic (optional) 1 Glass of milk (or water) 1 Green chilli (optional) 1 Spoon cooking fat/oil Method After removing dirt from omena, wash in luke-warm water then boil for minimum 30 minutes or more
